If the mangoes are hard and green, they should be placed in a brown paper bag for a few days to ripen. They should be stored at room temperature and away from the sun until they ripen. Mangoes generally have a shelf life of 1 to 2 weeks. Once ripe, they can be stored in the refrigerator. Mangoes can also be frozen. Freezing them makes their skin black but inner flesh will stay in good condition.
